Salad Course:
Tossed baby greens and arugula with pears, pepita apricots, dried cranberries, and crumbled feta cheese with pear dijon vinaigrette (Vegetarian/Gluten Free)
Entrée Course Options:
- Beef: Porcini crusted Roast New York Striploin, served atop parsnip mashed potatoes and finished with coffee demi-glace, honey glazed baby carrots, and caramelized cipollini onions
OR
- Chicken: Chicken Roulade stuffed with apples, currant, goat cheese, and spinach. Served with roast chicken jus, butternut squash, and pomegranate
OR
- Vegetarian: Stuffed Portobello Mushroom pan seared and stuffed with spinach, roasted heirloom tomato, fennel, leeks, artichoke hearts, Himalayan red rice, ricotta, and parmesan cheese. Presented on a bed of parsnip mash, porcini mushroom sauce with ribbons of red and yellow pepper coulis (Vegetarian/Gluten Free)
Dessert Course:
- Chocolate coconut cake with raspberry accents
